I set one on the bedside table with a little kickstand I had, and the other one in my hand to record pov. Not the best camera setup, but it got the job done. She turns on the light for you if you're filming, so you don't need anything specifically for low light recording. If I did it again I'd probably get myself a tripod stand, and maybe some kind of handless mount for the pov shots. Having to hold it took away some of the engagement. I think the more cameras/angles the better, but that's quite the investment. But you'll get a lot more mileage, and have the ability edit them together to craft your ideal video.
